The winning recipe is a side dish we think is perfect for the holidays—a spin on the traditional au gratin with the addition of Washington apples for a little tartness and big flavor. Katrina of Bellingham has been preparing this tasty dish for family get-togethers for many years.
Au Gratin Concoction
- 2-3 Granny Smith apples
- 1 small sweet onion
- 3 medium white or red potatoes
- salt & pepper to taste
- 6 oz Heini’s organic raw milk white cheddar, shredded
- 1/2 cup organic heavy cream
- 1 Tbsp chopped herbs (optional)
Preheat oven to 350.° Core apples and cut into rings. Slice potatoes and onions.
Layer apples, potatoes and onion into 10″x10″ Pyrex or cast iron skillet and season with salt and pepper. Sprinkle cheese on top and pour the cream over all. Sprinkle with herbs, if desired.
Cover with lid or foil. Bake for 30-50 minutes until potatoes are soft. Remove lid or foil and bake for 10-15 minutes until top is brown and bubbly. Serve warm.
