Goat Cheese Mashed Potatoes
Creamy, tangy goat cheese makes these mashed potatoes irresistible.
- 6 yellow potatoes
- 2 Tbsp butter
- 1/2 cup half-and-half
- 6 oz MontChevré organic goat cheese
- 1/4 cup fresh green onions, finely cut
- Kosher salt and pepper, to taste
Peel potatoes and cut in half crosswise. Place potatoes in large pot and add enough salted water to cover potatoes by 2″. Bring to a boil, then reduce heat to medium and simmer until potatoes are tender when pierced with a fork, 25 to 30 minutes. Drain well and set aside for a few minutes.
Mash potatoes with half-and-half and butter until butter is melted. Add cheese, green onions, salt and pepper and mash until fluffy and evenly seasoned.
