Garden Fresh Gazpacho with Heirloom Tomatoes

Whether you prefer a fine Brandywine or an eye-catching Green Zebra, our heirloom tomato varieties will turn your summer dinner into a culinary masterpiece.

Heirlooms, known for their open pollination and seed-saving abilities, have grown in popularity due in part to their sweeter and richer flavor. Slice ‘em up and pair with a soft mozzarella or toss in a salad for a sweet taste of summer.

Garden Fresh Gazpacho with Heirloom Tomatoes

Ingredients

  • 4–6 heirloom tomatoes
  • 1 English cucumber
  • 1 red bell pepper
  • 1 Hatch chile
  • 1 small red onion
  • 3 cups tomato juice
  • 1/2 cup cilantro
  • 1/2 tsp cinnamon
  • 1 lime, juiced
  • 1/2 tsp cayenne pepper
  • 2 garlic cloves
  • 1 tsp kosher salt
  • 1/4 cup extra virgin olive oil

Garnish:

  • 1/2 cup cucumbers, diced
  • 1/2 cup peppers, diced
  • 1/2 cup almonds, diced
  • Basil, sliced

Directions

Cut the tomatoes, cucumber, pepper, chile and onion into cubes and place in a large bowl. Add remaining ingredients into the bowl, cover and marinate over night. Place ingredients in a large blender and blend on high until smooth. Store in refrigerator for an hour or until cool. To serve, divide gazpacho between bowls and top with garnish.
