Curried Chicken Linguine
Eastern-inspired pasta with a simple addition of our Haggen Curried Cauliflower soup.
- 2– 6-8 oz boneless chicken breasts
- 1/2 ts. kosher salt
- 1/2 tsp black pepper
- 8 oz linguine, dry
- 23 oz container Curried Cauliflower soup from the Haggen Delicatessen
- 4 cups fresh spinach
Preheat grill to medium. Season chicken with salt and pepper. Grill chicken for about 8 minutes on each side or until internal temperature reaches 172°. While the chicken is cooking prepare the pasta according to the package directions and heat the soup to a simmer. Remove chicken from the grill and let rest for 5 minutes before slicing into thin strips. Place the spinach on a serving platter or individual plates and top with drained linguine, sliced chicken breast and then pour the heated soup over the top. Garnish with a sprinkle of ground pepper.
