Baked Oregon Shrimp Dip

Prep Time: 10 minutes | Cook time: 12 minutes


  • 1 lb Oregon pink shrimp
  • 1/4 cup mayonnaise
  • 2 tsp chopped thyme
  • 4 oz diced roasted red peppers
  • 1 cup Panko bread crumbs
  • 2 green onions, sliced
  • 3 Tbsp sherry
  • Salt and pepper to taste
  • 1 cup croutons, crushed


Preheat oven to 350°

If frozen, thaw shrimp and pat dry with a paper towel, taking care to get rid of any excess moisture or the dip will be runny. Combine all ingredients except crushed croutons. Mix well and place in an oven-proof pan like a small cast iron pan. Top with crushed croutons.

Place in oven for 10–12 minutes until hot and bubbly.
Serve with toasted pita chips.
