2011 Aviary Cabernet Sauvignon
The 2011 Napa Valley harvest wasn’t as large a crop as 2009 or 2010, but what was lost in quantity was made up for with quality. A wet winter and spring delayed bud break and bloom. A cooler summer led to a very late harvest and one that required a lot of patience for the grapes to fully ripen. Harvest was several weeks later than normal, but our patience paid off and shows in elegant flavors and complexity.

The 2011 Aviary Cabernet Sauvignon is deep garnet in color opening with aromas of blackberries, dried plums, cigar box and a hint of pepper. The broad mid-palate is rich and balanced with flavors of plum, currant and black tea. The lower alcohol and softer tannins give this Cabernet Sauvignon definition and structure in a more elegant and approachable style. A perfect wine to enjoy both on it’s own and with food.
