An autumn afternoon spent at BelleWood Acres in Lynden, Washington entails long gazes at stunning Mount Baker, an awe of the ripe, gorged apples and pumpkins and tastes of some of the finest spirits in all of Whatcom County. Owner and master mixologist, John Belisle, takes us through the process of concocting his fall favorite, Hot Apple Brandy Cider, which he calls “the unofficial Seahawks drink of choice” and “the best way to warm up when you’re covered in leaves.”
Hot Apple Brandy Cider
1 oz BelleWood Eau de Vie Apple Brandy
8 oz BelleWood Acres Apple Cider
Pinch of BelleWood Acres Hot Mulled Cider Spices (optional)
Pour apple cider and mulled cider spices (optional) into saucepan or steamer mug and heat until very hot but not boiling.
Pour hot cider into a mug or mason jar then add shot of Apple Brandy.
For maximum satisfaction, enjoy in a pumpkin patch on a crisp fall day or plopped next to a cozy wood fireplace.
